Heart healthy recipe: Bruschetta salad with white beans

This recipe is a refreshing and classic take on a traditional salad. White beans provide protein and fiber, helping you feel full longer. Mixing vinegar, basil, olive oil and lemon juice together creates a dressing low in saturated fat. Saturated fat should be avoided if you're trying to improve your heart health. 

Ingredients

  • 1 clove fresh garlic (minced)
  • 1 green onion (chopped)
  • 1 tablespoon red onion (diced)
  • 8 ounces cherry tomatoes (quartered)
  • 8 ounces canned, low sodium white beans (drained and rinsed)
  • 1 tablespoon fresh basil (chopped)
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons extra virgin olive oil
  • ½ teaspoon lemon juice
  • 1⁄3 cup part skim shredded mozzarella cheese
  • 4 cups mixed greens
  • Black pepper (to taste)

Instructions

  1. Combine all ingredients except for salad greens.
  2. Allow to marinate for 10 to 15 minutes in refrigerator. 
  3. Combine with salad greens. 
  4. Enjoy!
