Heart healthy recipe: Easy chickpea salad sandwich

Chickpeas are a tasty source of protein. They’re naturally high in fiber and potassium, which help to keep total cholesterol levels lower. The 100% whole wheat bread also packs a fiber punch, so pairing them together makes for a perfect heart healthy lunch.

Ingredients:

  • 3 1/2 cups cooked dried chickpeas (Cooled)
  • 1/4 cup light mayonnaise
  • 1 red onion diced
  • 3 stalks celery, finely chopped
  • 4 tablespoons of relish (Sweet or dill)
  • Pepper, garlic powder or onion powder to taste
  • 100% whole wheat bread

Instructions:

  1. In a mixing bowl, use an avocado masher or a strong fork to mash the chickpeas well. They should retain some of their texture and not appear pureed. It is OK if a few whole chickpeas are left. 
  2. Mix the mayo into the chickpeas and give a few more mashes. 
  3. Mix in the onion, celery and relish. 
  4. Add salt, pepper, garlic powder and onion powder to taste. 
  5. Assemble into sandwiches, toasted or untoasted and serve sliced in half.
