Kale salad recipe
Kale Salad

INGREDIENTS
Dressing:
- 1½ tablespoons honey
- 1½ tablespoons mayonnaise
- 2 teaspoons cider vinegar
- ½ teaspoon Dijon mustard
- Cracked pepper to taste
Salad:
- 1½ cups kale leaves
- 2 cups shaved Brussels sprouts
- 1½ tablespoons dried cranberries
- 1 tablespoon toasted pumpkin seeds
- Heaping 1/3 cup shaved manchego cheese (1.5 ounces)
INSTRUCTIONS
- Step 1: Wash and dry Brussels sprouts. Thinly slice or shave cheese, set aside.
- Step 2: Mix all dressing ingredients in bowl.
- Step 3: Add Brussels sprouts to dressing bowl, mix well.
- Step 4: Add cranberries, seeds and cheese, toss gently. Serve and enjoy!
